Yesterday I went with my girlfriend to a cooking workshop in the Hague.

This is the result:
Pre-course, scallops and wolffish on skinned paprika with a redbeet sauce.

Maincourse, deersteak in a jacket of time on mashed parsnip. Leek, parsley and spanish pepper in a leekjacket with a redwine sauce.

Dessert, ricottacheescake with amarelle cherries, dryroasted hazelnuts and homemade balsamic vinegar syrup.

And again, yes I know... my plate presentation sucks balls.

OK, in all honesty, and back on topic: I like to think myself a rather good cook, but I am not one at all to follow recipes. Granted, I will pick up stuff at the grocery with an idea of making certain dishes, but most of the time, my meals consist of items I stumble upon while rooting through the fridge. Hell, a lot of times, my sauces will actually be yesterday's soup, but with some extras added.
Am I the only one who pulls that stuff?

Hell no. If you watch those cooking shows they tell you about saving scraps to use later to make something else. Saving fat to use later for frying. Veg scraps to make stock. When I shop the first thing I look for is what is on sale and stock up. Second is based upon what I have on hand. What can I do with what I have right now? As long as I have a nicely stocked spice rack only 1 or 2 additional minor items may be needed. Substitution is allowed and can clean out the fridge before it goes bad.

I never thought about that vegetable soup into a sauce idea. Thanks. That is going into use for me.

Yesterday I saw a dish for leftover Thanksgiving dinner I will be making. Mix leftover stuffing into a bowl with some leftover turkey. Stuff it into a yellow pepper. Into the oven for 20 minutes. Top with any melty cheese and into the broiler till you start to see the cheese get brown. Ready to serve.

I took my boat out on Tuesday and did a little fishing and hit the jackpot with some huge Spanish Mackerel! The biggest I caught was 35 inches
They ended up being a great meal....

There's a lot of things that aren't your strong side...but since you do cook half way decently I'll forgive the plate presentation.
Wanna know the sad part? Had I posted that pic it would have been deleted from this thread immediately.I'm honored really. With all of the pointless fuckfoolery I've seen on this boards since I've joined you chose to edit/remove/delete mine. But i'm sure it has nothing to do with You and Mariah being friends.

And people really do eat this stuff, believe it or not.

spanish mackerel are a secret fish. no everyone knows that are actually decent eats. especially compared to regular macks.

i used to fish the shit out of those things when they came into the harbour. make great seasonal sushi too.

I only ever eat smoked Mackerel, think that's the most popular variation of mackerel sold here in Holland, very nice on sandwiches!
But that image with the beans and potato slices looks great and like a healthy meal.
Must be nice to be able to fish right from your back yard so to speak and then eat it the same day.

i love smoked mackerel. and most any other smoked fish. yummy. ive been dying to smoke some fish myself.

problem is, i cant find any papers big enough to roll them up in. :joint:


but really. smoked salmon collars and albacore bellies... omg.

what does "failded" mean?

Spanish are ravouness fish they will bite on anything pretty much. I caught these on small pinfish and they were the largest I've ever seen. Checkout the mouth on this thing! This is the fish that is on my plate by the way :)

mmm... so yummy. you cant go wrong with smoked fish. even the shitty ones like mackerel are decent smoked. herring even.

damn.. now im really hungry.

i would hardly say psnish mackerel are "shitty" they are actually a very mild flaky white fish that are excellent for a lot more than baking they have a nice oily quality to them but again, nice and mild. broiling is my favorite method.

i was referring to regular mackerel. not spanish. i was the one saying SM was good. regular is shit.

you forget my chef skills crossed with my pro-fishing background. i can rock everyone in here with my fish knowledge. both catching and eating.

i used to catch those little bastards on lucky joe rigs. no bait even. we would get schools of them rushing in. the tourists would be wondering why on earth i was fishing for "mackerel."
