I don't eat in any italian restaurants in the US other than a VERY select few and even those aren't that great. I used to think my grandma's sunday dinners were great Italian but that's New York Italian and not even close to the real thing. Not even close.

And even then there's a huge difference between what the locals eat and what they make for tourists.
 
I diverted from the original plan and decided against the tomatoes and fried the eggs in pancetta drippings rather than poached.

so here is what I made:
fried eggs in pancetta drippings topped with prosciutto on a ciabatta toast w/olive oil topped it with some parsley, oregano and red chili pepper flakes

side of mozzarella with some hot capicola and a slice of watermelon

Washed it down with a watermelon mimosa and ate it on my dock which was really nice. :) but as you see, no makeup and not thrilled for photos of myself to be taken so early :)

and yes Petra 100 % true. I try and stay in B&B rather than hotels and the owners usually give great insight to places to eat that aren't touristy.

The food in Venice sucked. It's hard to find anything non-touristy there. I will never go back and that's sad because it's such a beautiful and original city. But everyone has a camera hanging around their necks. I was so unimpressed. I'll take Verona and Firenze and Chianti and Ravello and any of the Amalfi coast and even Naples any day.

Tonight I decided to have some Coho Salmon and wanted to do it a little differently.

I used my small webber grill and got a nice hot oak fire rolling. in put 2 oven bricks in the center, and laid a banana leaf with my salmon on top. I topped it with some diced scallions and closed the lid and it smoked it beautifully for 25 minutes as you can see below.

While it was smoking I made a nice beurre blanc sauce which is butter with scallions some squeezed lemon juice and white wine which I reduced down until it was nearly dry.

The smoke was really strong so I decided to use a baguet that I had left from yesterday and make a sandwich to cut the smokey flavor.

I topped the salmon with the beurre blanc and then a chili paste I made and some grill-roasted corn.

This was fucking delicious!!!!!!!!!
