croque-monsieur-front.jpg

During my first trip to Europe I started in London and traveled by train though France, Belgium, Switzerland and Italy during a 3 week trip. During those 2 and 3 hour train rides between towns I discovered the Croque Monsieur sandwich. That’s French for “Mr Crunchy” and boy does it live up to the name!
It’s a very basic and traditional French meal, basically their version of a grilled cheese or ham and cheese sandwich. But it has that incredible smoky flavor of the Gruyer cheese that just makes it so amazing!
Plus in this video you’ll learn the most essential sauce base, the bechamel sauce which can be elaborated on to create so many wonderful things!
What You’ll Need:
REALLY good fresh bread
2 tablespoons butter
2 tablspoons all-purpose flour
low sodium ham
2 cups Gruyer cheese
1/2 cup parmesan cheese
sea salt
pepper

i used to do shrimping inbetween fishing a long time ago. my friends were shrimpers. used to unload spot prawns (i never liked the term prawns for these, they're fucking shrimp), and pink shrimp. i loved those pink shrimp. little fuckers but they were great raw with a squirt of lemon of boiled for a few seconds. shell and all.

i would sell the spot shrimp to the sushi bar a few doors down, live. he loved having those in the tank.

oh, here's what the pinks looked like: http://i00.i.aliimg.com/photo/v0/109068066/Northern_Pink_Shrimp.jpg

good. very underrated because of their size.

One of the all time greats in the sandwich world. When I'm France or Switzerland I always try grab one of these. You never seem to get them in the UK.

peaches-n-cream-tarts-front.jpg

This was something i came up with after a Sunday brunch that had these little tarts with fried apples. They also had these amazing grilled Peaches so I thought about how amazing it would be to replace the apples with the Peaches.
I came up with a different way to make the tart shells using Mascarpone cheese butter and flour. They weren’t what I had hoped but they turned out to be so tasty and very cute little cookie-like tart crusts. I had hoped for them to keep their shape and at first thought I had failed but it turned out pretty good! Here is the full recipe!
For the cream:
2 cups heavy cream
8oz mascarpone cheese
1/4 cup equal or sugar
1 tspn vanilla extract

for filling
2 Peaches sliced
1/2 stick butter
1 tblspn brown sugar
Dark Spiced ***

for tart shells
3oz mascarpone softened
1/2 cup butter, softened
1 cup all-purpose flour
Blend mascarpone and butter or margarine. Stir in flour just until blended. Chill about 1 hour. This can be made ahead and chilled for up to 24 hours.
Preheat oven to 325 degrees F (165 degrees C). Shape dough into 24 one-inch balls and press into ungreased muffin pan to make a shallow shell. Fill with Peaches and bake for 20 minutes, or until the crust is light brown.

Had 'Mariah's sirloin burger melt' this evening. Totally delicious, I've made burgers before but never with this combination of flavours. I'll definitely be having them again. Mariah, although I made the burger exactly the same as you, I made a couple of changes using Somerset vintage cheddar and ciabatta bread instead :)
