That's a really cool story. Enjoying wine with friends can give us so many wonderful moments. I'm looking forward to hearing more about the wine venture. Jed Steel was a, pardon the pun, steal. What region or regions are you getting your grapes from?

It's all from the Napa area. it was one of the best meals of my life and even though I drank so much wine, I wasn't as hammered by dessert as you would expect lol

clams-bucatini-front.jpg

Most everyone is familiar with linguini and clams, a very traditional Italian dish. But I love Bucatini noodles which are a thicker noodle that is hollow like a tube, so I use that instead! In Italy, they serve the dish with the clams in the shell, rather than the standard US version that uses canned clams (YUK!)
I also add a little red wine instead of white, which I think has a better flavor and I like the splash of color it adds. I also use fresh chopped oregano that adds a nice touch of flavor along with the chopped Italian parsley! One of my favorite dishes that is so simple but SO good!
What You’ll Need:
Bucatini or Thick Spaghetti Noodles
4 cloves garlic chopped
parsley
fresh oregano
small clams
olive oil

Mt three favorite wineries were Barnett on Spring Mountain early in the morning. Watching the fog dissipate from 2,500 feet was awesome. Chappellet at pritchard Hill was fantastic in the evening. Having dinner looking down at lake Hennessey as the sun set was awe-inspiring. Caymus on the Napa floor. i learned a lot from Joe Wagner. He's a good dude. In Sonoma I got to have a personal tour by Jean Charles Boisset at DeLoach. That guy is great.

I've been doing the same Bucatini and clam thing for years just like that. Gotta go with the hollow noodles there. And yes, fresh clams with the shell. They say you get 2 things from fresh clams, the clam and the juice.

Never had Shepherd's pie and you made it look so easy. Thought I'd need more potato but went with just the one potato and it worked out great. I did it last night and it's going into my rotation. Thanks for that one.

my pleasure and yes I went to the Chateau Lafitte Rotschild in 2011 and it was amazing! I started in London and took the train to Paris, rented a car and drove the coast all the way to Bordeaux, then the southern route all the way to the Alps. Amazing country.

leg-of-lamb-pot-roast-front.jpg

I live near one of the largest Greek communities in the US, Tarpon Springs, so I have access to some amazing butcher shops with lamb. I bought this boneless leg of lamb and decided to make a pot roast with it using my crock pot. I knocked this one outta the park, if I say so myself. It was AMAZING! So tender and tasty! I also used purple splendor potatoes which I love! They are so creamy but also add a nice touch of off-beat color.
What You’ll Need:
1 leg of lamb boneless
carrots
celery
bay leaves
mushrooms
4 tomatoes
sea salt
pepper
2 cups beef stock

filet-redwine-reduction-front.jpg

I had bought an entire tenderloin and had some steaks leftover, so I thought I’d try something different with it. I also had half a bottle of red wine, some sweet peppers and garlic so naturally they all found one another in my cast iron skillet!
As well I had some leftover boiled red potatoes so I mashed them up and served the filet on top of them and poured my red wine reduction over the top. AMAZING!
For the cream:
Filet Mignon (beef tenderloin)
red wine
1 tablespoon worcester sauce
1 teaspsoon dry mustard
2 garlic cloves
3 sweet peppers
sea salt
papper
mashed potatoes
1 bay leaf

Here's some blackened cod that I made last night.

I'm watching some specialist videos
where is everyone?

Working!

Nice looking bit of steak - great marbling.

These are a couple of rib eye's simply fried with salt, pepper and sprayed with a little olive oil. Just 90 seconds a side (very rare) and they were really tender.
we ate them served with some Steers Monkey Gland Sauce (South Africans will know this one) and a side salad.
