Thought I'd share some more pics from my trip to Beynac-et-Cazenac, France.
Locally-raised Filet Mignon with truffle butter and salad with local mustard dressing and local walnuts. One of the better meals I've had in a long time.

Last summer I took the bullet train from Beijing to Xi'an. I took a number of pics of the scenery on the journey. Problem is the bullet train was travelling at 200mph. Every time I took a pic of stunning scenery by the time my phone cam had focused and decided to take the pic we were already one mile past the event!

Working on the full episode from my France Trip and thought I'd share a couple cool screenshots....
Making a Dandelion wish...These were the biggest Dandelions I've ever seen! On the walk down the hill through the trees from Chateau Beynac back to the village the roadside was full of them.
The walk up the hill back to where I stayed. I did this 4 or 5 times every day.

Thank you! I think I am pretty close to pulling the trigger on moving there. Once my son goes back to school in July I'm gonna fly back over and spend a week looking at property and hopefully this time next year I'll be based out of southern France. Moving there from the US isn't so easy so we'll see. They make you work for it which is fine with me.
one of my favorite things when I travel in France....and Montreal as well, is the salad. The French Vinaigrette is my absolute favorite salad dressing that exists. It has a Dijon mustard base which is subtle but different than any dressing you'll find.
this was taken at le Petite Tonnelle an incredible restaurant in the village of Beynac-et-Cazenac and is literally built into the side of the cliff with one wall entirely rock.
the dressing is easy to make and will blow you away! And you can put it on anything else as well. I have put it on chicken, pork, radishes (my favorite!) to name a few!
INGREDIENTS
2 tablespoons finely chopped shallots
2 tablespoons red- or white-wine vinegar
1/4 teaspoon fine sea salt, or to taste
2 teaspoons Dijon mustard
4 to 6 tablespoons extra-virgin olive oil
Freshly ground black pepper to taste

Yep, you can't beat this vinaigrette. My fridge is never without a jar of Dijon mustard smooth & coarse grain.
A few more pics from my trip. This time of the village of Sarlat which was beautiful. its bigger than Beynac with around 8000 people so it had more things going on, including an amazing farmer's market.

My favorite meal in Sarlat was had at Auberge Le Mirandol - roast goose with potatoes in duck fat and fresh local asparagus
The Sarlat street market incredible things especially Foie Gras which is a local specialty and DELICIOUS!

Oh, you took a trip to beautiful France?
I have been there twice, and since those trips I am hooked. I was lucky to have french lessons in school, and that makes the visits so much better
The city you were to loks fantastic, I guess you will have enjoyed the french cuisine a lot
