one of my favorite things when I travel in France....and Montreal as well, is the salad. The French Vinaigrette is my absolute favorite salad dressing that exists. It has a Dijon mustard base which is subtle but different than any dressing you'll find.
this was taken at le Petite Tonnelle an incredible restaurant in the village of Beynac-et-Cazenac and is literally built into the side of the cliff with one wall entirely rock.
the dressing is easy to make and will blow you away! And you can put it on anything else as well. I have put it on chicken, pork, radishes (my favorite!) to name a few!
INGREDIENTS
2 tablespoons finely chopped shallots
2 tablespoons red- or white-wine vinegar
1/4 teaspoon fine sea salt, or to taste
2 teaspoons Dijon mustard
4 to 6 tablespoons extra-virgin olive oil
Freshly ground black pepper to taste
