I live in the Tampa area, and other than Miami we have the largest number of Cubans in the US. The food is so great and I have such easy access to roast pork and great coffee and black beans n rice that I take it for granted. When people visit me the first thing they want is Cuban food. The flagship of Cuban cuisine is the Cuban sandwich! Pressed flat on hot buttered bread that is crunchy and sooo good!
What You’ll Need:
bread (Italian if you can’t get Cuban)
ham
roast pork
swiss cheese
pickles
mayo or mustard

Press it flat and enjoy!

I was at a food festival yesterday and stupidly tried some Bhut Jolokia chilli pepper sauce. It was really tasty for about 30 seconds then the heat kicked in. I was in tears for about 30 minutes. As for this morning... suffice to say things are hurting at the exhaust end. Toilet paper is in the freezer - it all helps.

Asbury Park, NJ. Last year I had a Cuban with pork that was so large and scrumptious on the boardwalk. The guy got wiped out thanks to Sandy and wasn't back when I went down there a few weeks ago. It was a dinky little place. You got the feeling that he was making a sandwich just for you. Great way to kick back and watch the tide rise.

That sucks that he's not around. Hopefully he got a check and is rebuilding!

There are so many places here in Tampa that are incredible for roast pork and Cuban sandwiches. There is this little bakery by the airport that I always hit on my way in or out that has the BEST cafe con leche and cuban sandwiches. whenever my mom visits she requires me to stop there for her!

Hey Mariah. I'm discretely following your recipes, but i have a question which puzzles me eheheh I see you always mention olive oil, without extra virgin: is it on purpose because you suggest plain olive oil or we should assume that it should be extra virgin?

I always use extra virgin, I just forget to add that to it lol but if you are going to use olive oil to cook something that requires higher heat, then use regular olive oil and NOT extra virgin. extra virgin has a very low smoke point, meaning it will burn easily whereas regular olive oil does not. :)

thanks for lurking :)

Indeed. Extra Virgin is ruined by high heat. It is best used in dressings rather than for cooking.

The Smoke Point is used as a marker for when decomposition of oil begins to take place. This decomposition incurs chemical changes that result in reduced flavor and also the generation of harmful cancer causing compounds (oxygen radicals), therefore it is important to not heat oil past its smoke point. Inhaling the vapors can also be damaging.

Also, don't keep your olive oil by the stove...it can be ruined.

In the UK rapeseed oil is becoming massive. It's infinitely healthier than olive oil etc. Personally I cannot stand the stuff, zero flavour. Olive oil, extra virgin olive oil & groundnut oil for a stir fry is what I go for. I'm even partial to a bit of Ghee when making a good old ruby from scratch. :)

I love it when Mariah adds the salami and the nuts.
