It doesn't have to do with species- with the exception of a couple species that have Force repulsion. It just has to do with an individual's willpower. You'd assume that a Jedi master would be able to overpower anyone in the force but I guess it doesn't exactly work that way. The Hutt's are known to be very good at tactical reasoning and possible have strong intuition which may enable they more shrewd ones among them to understand that they are being tricked and not fall for the suggestions and images implanted in their heads by the mind trick.

Kind of hard to say how Superman would fair. The mind trick seems to usually work against humans, especially when performed by another human Jedi. I would assume that Superman is smarter than most humans though, considering that his parents were Krypton's top scientists.
In short, the Jedi mind trick is pretty moot in this battle. Hell, now I'm having doubts as to whether it would actually work on Lex Luthor even. Superman? That's one thing that's just here recently beginning to get more play in the DCU again which was a pretty essential part of his character during the silver age. His Super-Intelligence. Read some of the Showcase trades and you'll see exactly what I mean. So no, that little mind trick isnt going to get much play here. Unfortunately for the farm boy.
