I'm not Star Wars expert, but I remember from Jedi that specific power didnt work on the Hutts. I wouldnt be surprised if there were other species who are immune as well.

It doesn't have to do with species- with the exception of a couple species that have Force repulsion. It just has to do with an individual's willpower. You'd assume that a Jedi master would be able to overpower anyone in the force but I guess it doesn't exactly work that way. The Hutt's are known to be very good at tactical reasoning and possible have strong intuition which may enable they more shrewd ones among them to understand that they are being tricked and not fall for the suggestions and images implanted in their heads by the mind trick.
Kind of hard to say how Superman would fair. The mind trick seems to usually work against humans, especially when performed by another human Jedi. I would assume that Superman is smarter than most humans though, considering that his parents were Krypton's top scientists.
The only thing a lightsabre can't cut through is another lightsabre. So if Cop-Out Man with his laser eyes/flying/super speed/cold breath/xray vision/bullet proof chest/super strength/super hearing... (did I miss anything?) get's anywhere near a lightsabre, he's history. Supershcmuk would have his work cut out against a padawan.

In short, the Jedi mind trick is pretty moot in this battle. Hell, now I'm having doubts as to whether it would actually work on Lex Luthor even. Superman? That's one thing that's just here recently beginning to get more play in the DCU again which was a pretty essential part of his character during the silver age. His Super-Intelligence. Read some of the Showcase trades and you'll see exactly what I mean. So no, that little mind trick isnt going to get much play here. Unfortunately for the farm boy.

...well there's other stuff also like: things made with cortosis, force fields, and some dark side armor is resistant to it. Also some thing like a ships blast doors or large bulkheads would lake a little time and effort to get through, and considering Superman is durable enough to come through unscathed even if he carried around a nuclear bomb when it went off he's probably a little harder to cut through than most things.
