Call me impatient but if we ain't seen it then it never happened. Labor Day is coming up and I want to see food cooked outside. Somebody post something. I would except I'm not going to spend $500 on equipment just to do that.

The problem I have with ribs is the slop of sauce that comes with them. Good tasting sauce but let me use it as I may. I'm a dry rub guy. Soak in the flavor during the long cook and present your sauce on a glaze. I'll add more with a spoon.

I have traveled to BBQ lands but not to sample the better foods. I really should though. The thing is that I'm not going to learn anything from the restaurants. I want people to show and tell me what to do. That's why I come here.

Im gonna do braised short ribs this week and maybe Ill do some chicken on the grill. I dont care for beef over flame.

I too am a dry rub person. I prefer it on everything other than pork.

In case you didn't see it before...I use a simple kettle charcoal grill and once the coals are hot I put chunks of oak on them and allow them to burn down for about 5 minutes then I put a brick on the grate so there is no direct heat. after searing using clarified butter in a cast iron skillet on each side for 3 minutes, I place my steak on top of the brick and close the lid and this is what you get. it takes about 10 minutes for a 2 inch thick steak to cook to medium rare this way and it is one of the absolute best steaks you will ever eat. just put a little sea salt and pepper and a dash of Lawry's or Cayenne pepper. this is about the only way I would ever put a steak over a flame.

Don't tease me with that steak. No, I've got a better idea, this coming Labor Day weekend I make that steak. It's just me and my Brother for the weekend. He deserves this. I'll need help posting the pics. I'll PM you for that.

I hope it's not too late for a nice refreshing end to your meals. You may have your take on it but the basics I just discovered. Make an ice cream float with liqueur. 3 ingredients. Ice cream, soda, liqueur. I used maple walnut ice cream with Pepsi and vodka. You want a White Russian? Skip the Pepsi. You still get the nuttiness. You want to keep the drinks flowing? Ice cream and milk is the answer. Yea, there are lots of frozen choices for you. If you want to get into the sorbet/margarita thing then go for it. But think of the creaminess. Think of the different deserty flavors. Any supermarket has a pumpkin pie that you can throw in as well. Just one piece will last their drink flavor for quite a while. You folks ever do this?

the drink sounds great! I LOVE ice cream drinks with booze!

Yeah I had steak Florentine in Florence where they cover the steak with a layer of lard before they grill it incredibly unhealthy but Jesus Christ was it good! The beef they use is Chianina beef which are those HUGE white oxen the steaks are enormous and it's usually a porterhouse cut. one of my favorite meals I've ever had.
 
I had steak Florentine in Prato just up the road from Florence. A massive slab of meat for 4, the only thing served with it was some baked spuds wrapped in foil. Simplicity at it's best.

Standard alcoholic ice cream drink for me: Vanilla Ice cream, Bacardi & Pepsi (none of that coca cola shit). Ratios and quantities of each ingredient at the makers discretion.

this is my favorite its pureed strawberries on top of a vanilla milkshake with a healthy dose of rum! :)
1 pint of vanilla ice crea
1 cup dark spiced rum
1 pound fresh strawberries
zest of 1 lemon
1/2 cup of milk
blender or food processor

spent the day out on the water with some friends skiing and tubing one of the best summer days I can ever remember. 90 degrees, slight breeze, flat water that was so clear. Had a blast! We headed back to my house where I had some special burgers I made last night 50% ground prime ribeye, 30% pork sausage and 20% ground chuck homemade mayo that had apple cider vinegar and cayenne pepper, grilled vidalia onion, kosher dill slice, beefsteak tomato and melted Gouda cheese all sitting pretty on top of a french kaiser roll.

I have to say these photos of the meat as I was making the patties is awesome! :) the sun was setting and the light was perfect so I grabbed the camera because I knew it would be a great photo! They turned out to be incredible. I grilled them on a cedar plank so no direct flame hit them.

someone was being very sneaky lol but I like the shot though so.... someone posted this on twitter and told me "Look 3 boats over" and there they were...best part, it was a hot 24 year old girl! Can't say I don't love when that happens!

I made macaroni salad today that was outrageously good! i made some basic macaroni salad with elbows, mayo, celery and some diced onion. then after I tried it and it was bland I chopped up some sweet banana peppers and added some cayenne pepper and a little hot sauce and holy shit was it good! :) thought I'd share took the dogs out to the sandbar and packed a picnic basket literally, a picnic basket :)
