I don't see much meat in there. Are you a Veg Ace? I'm looking at about 6 different vegetables in there. I see squash, eggplant, green peppers, mushrooms, some kind of green onion. How close am I?

Here's my problem. While vegetables cooked right are a delight, the timing to add to the pan (plus the tendency to overcook by me) make your dish look like mush when I do it. I can't get the heat right. I fear burning and thus add water. Combine this all and all I get is a plate full of shit in texture and color. It never comes out right. Is it my oil? What am I doing wrong?

I know that you should never use virgin olive oil to cook with - it does not take the heat and breaks down. It has a very low "smoke point". It is great in salad dressings, though.
I know that good ingredients go into good food.
I know that I love both cooking and eating good food.

I know that Mariah has been nominated for OCSM of the Week, and that denizens of this thread should stick a vote in for her.

Well first of all Italians don't eat garlic bread. American Italians do, but in Italy you can get bruschetta as an appetizer but you won't find garlic bread on any plate unless you're in an ultra-touristy area like Venice.

as far as Bolognese I make it the same way I make pomadoro http://dinnerwithmariahblog.com/?p=489 but you add pancetta & ground beef & pork sausage

I made this and did not add any meat at all. It was beautiful.

Bob, a little advice. Do not fry any food in a glass dish.

if you make something that needs time like braised short ribs or chili I would use a heavy bottomed pot. same with frying or searing when you need high, even heat use cast iron skillet.

The new king of the oil world is rapeseed oil. I now use it all the time to cook with. http://www.farrington-oils.co.uk/rapeseed-oil/

I still use a good quality extra virgin olive oil for dressings though.

I have a few pieces of the Vision series from Corning and I love them. Don't have any of the skillets but was thinking about them. They have a waffle bottom and I think they had a Teflon bottom version too. Both are a little suspect for me so I'm glad to get the feedback.

Has it been 44 minutes yet? Good. Thanks for the pan advice. You know, I've been trying to make a basic lo mein thing and just keep fucking it up. Great noodles and peanut oil. I have the ginger and know how to add it. I've cooked it in a pan and wok. All times it's shit. But hey, Mariah doesn't BBQ. I'll stick to the casseroles and trotters.
