I believe that a Gyro is a species of kebab known as a Doner over here (no relation to the Donner Party (though it is pronounced the same). The Doner is properly made from marinaded lamb topped with lamb tail fat. Usually it's now made from lamb mince.

There won't be any offal involved

It is however delicious, especially after a skinfull of ale.
