Chili

All I ever use is Carroll Shelby's chili mix. But only ONE can of beans! And I add 2lbs ground beef, 1 chopped red onion, one can of tomatoes with jalapeno peppers, and one chopped green pepper.
 
... make a pot of chili ... in a 36 quart sauce pot

But in all seriousness, I agree, I am all for cooking in big quantities in large pots. ;)

actually, when it comes to red sauces for pasta it's important to use a nice mix of pork, veal, and beef. The same applies for Italian meatballs.

My wife has ethical issues with veal, so she won't eat it. I on the other hand could kill the little fucker myself, it's so delicious. Actually, it makes the sauce nicer if you use a mix of beef and pork, but the pork is the most important, and it has to be something with a bone in it. I like neck bones, but will use spare ribs, or even pork chops if I have to. Meatballs can be made from only beef, but you have to use eggs, Romano cheese, breadcrumbs, and a little parsley and oregano....and you have to brown them in a hot skillet, before you put them in the sauce to cook.
