This weekend they had a bbq festival in d.c. I missed it unfortunately.
 
Don't forget lamb ribs. I love lamb ribs. They're so fatty and greasy. Nothing sweeter than the taste of young flesh. A little lemon, a little garlic. *Kisses fingers*

I notice you haven't mentioned McRib.....I applaud you.
 
I have mild O.C.D., so I don't eat food that gets on my face or hands. Therefore I don't eat ribs, buffalo wings, sloppy joes, etc.... :dunno::2 cents: I'm psychotic about not getting my hands or face dirty. :dunno:

I only eat them in restaurants. Too long of a process to make at home.

I steam them over ****, then add dry rub, smoke in my offset cast iron smoker (cherry wood, or mesquite/apple), then leave overnight marinating in BBQ sauce, then finish off over charcoal.

People have wept with joy eating my ribs. Not MY ribs, but my ribs ... ahh, fuck it

occasionally i make beef ribs. i dont dig on the swine but people are always really surprised when i make the beef ones. and they go over nice.

i always braise em for a few hours then smoke em over mesquite outside.

the braising liquid makes an incredible sauce for em too.

For the dinner on US's Day of Independence...I've got the ribs/pork butt (from local butcher)....Got my dry rub ready (paprika, chili powder, kosher salt, black pepper, cumin brown sugar, celery salt). I typically smoke them for up to 14 hours at a temp of 200 ºF/ 93 ºC... final temp ~160-165 ºF (86-88 ºC)...or just enough to let the fat almost render completely out...then throw them on a charcoal grill for 5 min/side... The smoky taste is intense but not overly misquite/hickory. Pair them up with grilled corn, hush-puppies/corn fritters and cole slaw...

ribs can be pretty fatty and have a lot of gelatin. that can give you the runs and an unpleasant stomach. its not a surprise you felt a bit sick. especially if you're not used to that.

Words of wisdom, Squallumz. Especially considering your experience with explosive diarrhea. :tongue: :D
 
Hey, sewer rat may taste like pumpkin pie, but I'd never know 'cause I wouldn't eat the filthy motherfucker. Pigs ***** and root in ****. That's a filthy ******. I ain't eat nothin' that ain't got sense enough to disregard its own *****. :D

What about dogs? A dog eats its own *****.

But spare ribs like you describe them are hard to come by here in Germany

I had some, but not with all those trimmings

I guess I would have to go to the Frankfurt area, where all those GIs sure will demand to get some home-style ribs :2 cents:
