Wild Rice *Healthy Choice*

It would be healthier to use brown rice rather than white sushi .. :)

oh and a ps .. the more you stir rice .. the stickier it becomes .. best to cook it stirring once or twice only .. in the ratio of a cup and a half of water to a cup of rice.
 
This is easy and very tasty.


Cheesy One-Pot Chicken Cacciatore

1 tsp. oil
1 lb. boneless skinless chicken breasts, chopped
2-1/2 cups water
2 zucchini, chopped
1 small onion, chopped
1 Tbsp. chopped fresh oregano
1 pkg. (14 oz.) Deluxe Macaroni & Cheese Dinner
1 can (14-1/2 oz.) stewed tomatoes, drained



HEAT oil in large skillet on medium-high heat. Add chicken; cook 5 min. or until browned.
ADD water, vegetables, oregano and Pasta. Bring to boil; simmer partially covered, 12 min. or until pasta is tender.
STIR in Cheese Sauce and tomatoes; cook until heated through.

I'm a big fan of Curry.

Get a box of Golden Curry.
The curry is like a hard retangular block. It comes in different heat levels -- I like the Medium Hot. Usually you can find it on the oriental food isle in a grocery store. Look on the bottom shelves if you don't see it.

Grap 1 potato and chop it.
Grab some carrots (I like the shredded kind).
Grab 1 pound of hamburger.
Grab 1 onion (optional).

Get a box of Boil in bag rice.

Heres the directions.

Throw the boil in bag rice in a bowl and toss in the Microwaver for 10 minutes.

Brown the hamburger and drain the grease.
Throw in the water (the amount is on the box)
Toss in the potato, carrots, and onion.
Bring to rolling boil, turn to low, throw a lid on, cook for 10 minutes.

Throw in the block of curry. Turn off the heat. Put the rice in a bowl.
Wait about 10 minutes. Stir the curry. The block should be disolved.

Eat with the rice and enjoy.

Makes about 4 servings. Great for leftovers.
 
Fake Cum ...
add warm water to icing sugar ... stir until mixture thickens to the right consistency .. :D

Isn't it powdered sugar? Is it called Fake Cum Icing? What do you do with it?

Another Chicken Recipe:

Chili Chiken

Ingredients:
Chicken whole (cleaned and cut into pieces) 1 Kg
Green chilli 10
Red chilli powder 1/2 tsp
White pepper powder 1/4 tsp
Black pepper powder 1/4 tsp
Yogurt (curd) 1/2 cup
Turmeric Powder 1/4 tsp.
Soya sauce 2 tbsp.
Cornflour 2 tbsp
Ginger 1/2 inch
Garlic 4 cloves
Onion 1
Tomato 1
Salt to taste
Vegetable oil as required
Green chilli and green coriander leaves for decoration

Method:
1. Cut onion, tomato into small pieces. Add ginger, garlic and make paste.
2. Cut thin slices of green chilli.
3. Mix red chilli powder, salt, turmeric powder, yogurt, 1 tbsp. soya sauce, 1 tbsp cornflour and 2 tbsp oil. Marinate the chicken with this mixture for half an hour.
4. Then apply onion-tomato paste to the chicken and again marinate for half an hour.
5. Heat oil in a pan. Add green chillis, white pepper powder and black pepper powder and fry for 30 secs.
6. Add chicken marinade and fry until half cooked. Stir ocassionally.
7. Mix rest of the cornflour and soya sauce in water and add to the chicken. Add little water (about 2-3 cups) to make thick gravy and bring it to boil.
8. Cover and cook for 8-10 mins on low flame. keep a constant watch.

Garnish with green chilli on the sides and sprinkle chopped green coriander all over the chicken. Serve hot.
 
Tuna Carpaccio Thai style

This is a wonderful starter. Lots of "sting"!!! For 4 persons

500 gr (1.1 pound) of fresh tuna. Preferably blue fin sushi grade (ask your fish mongler), but yellow fin will work as long as it is ruby red and fresh! If you use yellow fin, ask for the thinner end piece.

1/2 decilitre (approx 1/10 of a pint) japaneese soy sauce
2 tablespoons of rice vinegar
2 tablespoons sweet chili sauce
2 teaspoons of sesame seed oil
2 tablespoons of brown sugar
1 jalapeno chili (sliced and take away thee seeds)
A small squeeze of lime

1 tablespoon of sesame seeds

Use a sauteuse pan or any pot with a thick bottom. Mix all ingredients except the fish and the sesame seeds. Just let it simmer for 10 minutes. Don't let it boil! Stir now and then.

Heat a frying pan and add some oil

Cut the fish in long "strips" an inch thick. Fry it very quickly all around. It is an absolute MUST that it is raw in the "core". Cut the fish in thin slices with a sharp *****. Spread the fish on four plates. Quickly roast the sesame seeds and add to the sauce. Pour the sauce over the fish.

Deviled Eggless Salad

INGREDIENTS

* 145 g non-fat cottage cheese
* 30 g fat-free mayonnaise
* 30 ml plain low-fat yogurt
* 15 ml yellow mustard
* 5 ml soy sauce
* 0.6 g ground turmeric
* 5 ml vegetarian Worcestershire sauce
* 10 ml rice **** vinegar
* 227.2 g firm tofu
* 75 g green onions, minced

DIRECTIONS

1. In a food processor or blender combine cottage cheese, mayonnaise, yogurt, mustard, soy sauce, turmeric, Worcestershire sauce and vinegar. Process until well blended. Add tofu and pulse a few times, maintaining a bit of texture. Stir in green onions. Refrigerate for at least 3 hours to allow flavors to meld.

Farmer's Casserole

Hint: Layer ingredients in a baking dish the night before, then cover and refrigerate. In the morning pop the casserole into the oven about an hour before serving. Ingredients

2 1/2 cups frozen shredded hash brown potatoes, or Tater Tots
3/4 cups shredded Monterey Jack with (optional) jalapeno peppers
1 pkg. Knorr's Leek Soup mix
1 cup chopped fully cooked ham or Canadian bacon (optional)
1/4 cup sliced green onion
4 beaten eggs or 1 cup egg substitute
1 - 12 oz. can evaporated milk (or 1 ½ cup evaporated skim milk)
1/4 tsp. pepper
1/8 tsp. salt
1/2 lb. asparagus or mushrooms, washed and cut into 1" pieces
4 to 5 tomatoes, coarsely chopped

Spray a 2-quart square baking dish with Pam. Arrange potatoes evenly in the bottom of the dish. Sprinkle cheese, ham, green onion over all. In a mixing bowl combine eggs, milk, pepper, salt, soup mix. Pour over mixture in baking dish. Sprinkle with Crazy Jane's salt and/or Mrs. Dash. Cover with foil or plastic wrap and refrigerate overnight. ext morning bake uncovered at 350 for 1/2 hour. Remove from oven; add asparagus or mushrooms and tomatoes. Bake for another ½ hour until golden brown. Let stand 5 minutes before serving.

Put owen on 225* C and "grill" (or what ever you call it when heat comes from top) :-O

Put the tray on top shelf, just under the element. for a short time. When the chocolate is beginning to get color, it is ready! Serve with vanilla ice cream!

(gas oven or hot air does not work as well)

Sorry - my kitchen lingo is not too good....

2 kiwi's peel and slice
100 grammes of white chocolate

Reminded me of this easy one. PD this will make you the bell of the ball at ****** gatherings and so easy its sinful. lol I vary it and also love it with the cherry pie filling and use choc cake mix. Apple pie filling w/yellow and top with apple cinnamon oatmeal pack sprinkled on it blending with the butter first. Spoon serving and top with whipped cream, or if warm, ice cream.

1 can (16 oz.) crushed pineapple
1 can (20 oz.) cherry pie filling
1 pkg. yellow cake mix
1/2 to 2/3 c. chopped nuts
1/2 c. butter

Grease a 9 x 13 inch pan. Dump in the pineapple and juice, spreading evenly. Pour cherry pie filling over the pineapple, spreading evenly. Add dry cake mix evenly over the fruit. Add nuts, then slice butter and lay all over the top. Do not mix. Bake in a 350 degree oven 1 hour.

This is a recipe that I came up with when I was on a camping trip a few years back. I call it "GLUMP"

Me and my buddies had decided to go camping at the the last minute. We made to mistakes. We forgot to check the weather report, and it rained the whole weekend. we also forgot to bring more than just one pot to cook in.

If you decide to make this recipe, follow these necessary steps, and you will have a perfectly cooked GLUMP

1. The weather needs to be between 0 and 5 degrees Celcius.
2. You have to make it outdoors on a portable Coleman stove.
3. Make sure you are under a tarp and that it is pouring down with rain.
4. Wear shorts and a T-Shirt
5. Only use one pot and one utensil
6. Do not measure or time anything
7. make it as fast as possible

Method:

1. Make a box of Mac and Cheese

2. Drain the water without a colander and onto the ground

3. Brown up enough ground beef to feed everyone you will be serving. Make sure you season the meat as soon as it starts to cook. Use pepper, salt, or whatever spices and seasoning you have on hand. Do not wash out the pot, and keep the fat.

4. Cut up some veggies (peppers, mushrooms, celery, carrots, onion etc...) cook em up in the same pot you used for the ground beef, to make them very flavourful. Make sure you cook em in the fat from the meet.

5. Mix everything together in the pot and season one more time.

6 serve up and enjoy

If you want you can add some hot dog wieners

I forgot to tell you, the chicken recipe was a hit with dd. Being an inexperienced one, this one was so tasty he asked where from I got the recipe. He knows I burn water without a book in hand. I just smirked and remained mum.
