Recipe Thread!

can somebody tell me two things about sushi? one, why is the rice always stuck together like they overcooked it? two, why do they use raw fish?:pukey:

A simple one from me for now:

When you make chilli, put a tea-spoon amount of sugar in the sauce :thumbsup:
Way back in the really ancient times ( I am not sure how long ago) Europeans used to put chocolate in chili. It was the Americans who turned it into a sweet type snack food

the rice should never be stuck together like that. ever. its supposed to have plenty of air between the grains. sushi was originally a way of preserving food. fish was fermented to preserve it and then probably eaten with rice as a meal back then. no, not many are into eating rotten fish so to simulate the tradition of the fermented fish, rice vinegar is used in the rice along with a touch of both salt and sugar.

theres a few different theories regarding this subject, but thats the simplest. why is the fish raw? well. a lot of foods can be eaten raw, but due to the poor conditions of the processing plants, they way our cattle and poultry are raised, slaughtered, etc, its not wise.

fish, however, is caught fresh and must be shipped out fast. the delicate flavours of fish can only truly be appreciated when eaten in its pure form, raw. when you get into an appreciation of food like the japanese have, youd want the real deal too.

the japanese lifestyle is interesting, they make bank, but are taught to live modestly. they spend their money on food and edible delicacies instead of 3 cars and a huge house.

in short, sign me the fuck up. i love sushi.

like i said, its not supposed to be like that. the nori (the stuff everyone thinks is seaweed but is actually a type of algae) is for holding it together. this is either grocery store sushi or just very poorly made sushi. not to mention, sushi is a finger food! using your hands is a-o-k. completely acceptable both here, and japan.

I eat rice with chop sticks all the time, I'll have you know. :D

Seriously, I've lived in both Korea and Japan and the rice was always stuck together no matter where I got it from. I just always thought that's how it was supposed to be cooked. Who knew?

not to mention, sushi is a finger food! using your hands is a-o-k. completely acceptable both here, and japan.

I remember first trying (and struggling) to eat sushi with chop sticks, and my Korean friend laughed at me, then he picked it up with his fingers and ate it. Btw, those are some chop stick using mofrackuses!
 
I thought sticky rice was just one way of cooking it. When you steam it is usually sticks together more than if you boil it. I love sticky rice and any sushi/sashimi I have ever eaten always has "sticky" rice.

Sushi... I could eat that stuff for breakfast, lunch, and dinner. I have been wondering if there is enough nutrients in sushi that you could do that and not become malnourished. If you also included some sort of fruits in your meals for Vitamin C and what not.

Vegetarian Hummus Wraps:
To prepare hummus, use food processor to blend 2 cans chickpeas, 1/3 jar tahini, and hot sauce to taste (tahini is ground sesame paste..you can buy it at a world food store or health market...you can use more or less depending on how much sesame flavor you like)

small cucumber, sliced
sprouts
tomato, sliced
choice of cheese
avocado, cut into strips
choice of tortilla/wrap...we like wraps made from spinach

Spread a layer of hummus over tortilla, add the other ingredients, and wrap it up!

rice, of course is eaten with chopsticks. duh! im talking about the rice in sushi. and yes, your basic steamed rice is a calrose type rice which is a little sticker, but sushi rice is different than calrose. and is only bought and served in japan.

japan does not export their rice.

I like sweet sticky rice. Many countries have their own type, Chinese mix the rice with all different goodies even chestnuts and raisins sometimes meat (sweet sausage my favorite) wrapped in leaves and then steamed. mmmmm

Now I'm hungry. lol
 
Lemon Herb Chicken *Healthy Choice*

Ingredients (For one chicken thigh)
-One chicken Thigh
-Garlic Salt (you can find it in the sores)
-Coarsely grounded black pepper
-2-3 lemons depending on size
-ziplock bag

Steps
1. take a chicken thigh clean it cut it.
2. combine all the dry ingredients in a mixing bowl, make sure there is enough for the chicken
3. pat the dry ingrediants on the chicken, put as much as you want, i usually give it a good coat, like 3 pat downs of spice.
4. put chicken thigh in a ziploc bag
5. take the lemon and roll it first to get juices flowing then halve it and put juice in the ziploc bag.
6. make sure chicken is covered in lemon juice. you can shake the bag around with the chicken inside.
7. if your bag is really big move the chicken to the corner of the ziploc bag with the juices and fold the bag so the chicken is in consant exposure of the juice
8. let marinade for 30-45 minutes.
9. grill it!

Grilling Instructions
1. i usually put this in an oven on 450 degrees or highest poosible
2. if no oven and using a grill, grill it over high flame but indirect heat.

*Goes great with Wild Rice*
 
Wild Rice *Healthy Choice*

Ingredients Serving Size (enough for 2 people)
Cooked White Rice about in a big mixing bowl.
2 cloves garlic
1 brown oninon
1 red onion.
soy sauce

Instructions
1. Heat up a large skillet or Wok if you have one (put oil when ready about 4tablespoons)
2.take the garlic and onions and chop em all up.
3. when oil is ready put the garlic and onions in there mixing it pretty well
4. Mix for about 8-12 sec. DONT LET IT BROWN (move to med. heat)
5. take soy sauce and liberally pour it onto the skillet or Wok. probably 1/4 of a cup soy sauce
6. take the rice and dump it on the skillet or Wok.
7. quickly mix the rice together with the stuff ( turn heat back to high)
- mix it by taking your spatualla thingy and putting it under the rice and folding it up so the bottom ingredients can come to the top.
8. mix until rice is mostly brown.

ENJOY!

This is easy and very tasty.


Cheesy One-Pot Chicken Cacciatore

1 tsp. oil
1 lb. boneless skinless chicken breasts, chopped
2-1/2 cups water
2 zucchini, chopped
1 small onion, chopped
1 Tbsp. chopped fresh oregano
1 pkg. (14 oz.) Deluxe Macaroni & Cheese Dinner
1 can (14-1/2 oz.) stewed tomatoes, drained



HEAT oil in large skillet on medium-high heat. Add chicken; cook 5 min. or until browned.
ADD water, vegetables, oregano and Pasta. Bring to boil; simmer partially covered, 12 min. or until pasta is tender.
STIR in Cheese Sauce and tomatoes; cook until heated through.

LL:angels:
 
Beans on toast:



1 slice of bread (toasted)
1 portion of beans (warmed)

Pour beans onto toast and eat.

Kadhai Chicken


Ingredients:
Whole Chicken 1
Chopped Onions (medium size) 3-4
Chopped Tomatoes (medium size) 6-7
Ginger Paste 2 tsp.
Garlic Paste 2 tsp
Chopped Green Chilli 3
Coriander Powder 2 tsp
Garam Masala Powder 2 tsp
Red chilli powder 1-1/2 tsp
Turmeric Powder 1/2 tsp
Salt to taste
Vegetable oil as required
Coriander leaves for garnishing



Method:
1. Thoroughly clean the chicken and cut into pieces.
2. Heat oil in a kadhai. Add chopped onions and green chilli and fry until light golden brown in color.
3. Add red chilli powder, turmeric powder, garam masala, coriander powder and salt. Mix well.
4. Add tomatoes, ginger, garlic paste and cook until the tomatoes become tender.
5. Add little water and bring it to boil.
6. When the gravy becomes slightly thick, add chicken pieces and mix well.
7. Reduce the heat. Cover and cook for 10-15 minutes (or until fully cooked).

If you have copper base kadhai then transfer the contets in that. Heat for a while. Then garnish with coriander leaves and serve hot.

A kadhai can be substituted with a a deep casserole.
