ok. starting tomorrow morning. just went shopping, got a bunch of stuff. im ready.


all their peanut butter was garbage so im just gonna make my own. even the "natural" peanut butters had palm oil in it. thats basically naturally hydrogenated oil. no thanks.

just need some peanuts and ill fire up the food processor. cant wait!

my last meat meals today: enchiladas and then turkey spam with eggs and fried rice.

I love steak and bacon too much to ever be a vegetarian. A properly prepared medium rare sirloin is one of my favorite meals.
Lol, perhaps some Donut Ham-Hamburgers, too?

its been a week and a half or so and i feel great. a lot more energy, just feel really clean and guilt free.


im really glad i decided to give it a go. im just keeping an eye on my protein but it seems not to be an issue at all with me. lucky for me, i love tofu. always have and already ate it regularly. just got done making my own mushroom and veggie burgers.

Be aware that if you don't eat meat for a long time, doing so once more can lead to diarhoea.
I'd join you on the basis that Greek meat is so much better than British meat and I can only hoist so much back to the U.K., but unfortunately ALL British food is ****, not just the meat, so little point.

quite frankly, its an adventure. my first shopping trip to the store was really crazy. you have to kick start a different mind frame. look and think of things you didnt give much thought to before.

as a bonus, the meals you have are totally different at times so everything's kind of new. i think a lot of us fall into our handful of regular meals once in a while and we dont realize that we are a little tired of it. but you are ****** to be a little creative with your meals, especially dinners.

That's an interesting and insightful look way to look at it. It's true, one can bore oneself by trying the same old same old. Like I had said earlier, I have intended to try it for much of my life. One day I will.

Cooking for my vegan gf is fun and challenging. I'm not very creative with food and flavours, so Google is my chef, but I've made things that I never would have thought could be combined. Peanut butter, soy sauce and apple cider vinegar? On a stirfry???? Blew my mind. If I cooked for myself I'd bbq a chicken breast and throw it on some plain rice.

thats a little thai actually. they throw peanut butter in everything. the only thing not in there would be citrus (lime) and some sugar (palm) and you got some thai food. asian flavours will use a lot of vinegar actually. thats the "sour" component to the dishes. even apple cider. i had added acv to some filipino adobo, it was kicking. usually the recipe calls for just white vinegar but now im mixing it up.

Tofu is fucking magic. I am not a veg but when I found out what I could do with it, it has become something I must always have in my house. It's a flavor sponge and you can do anything with it. 3 fresh blocks for $1 at the local oriental market. Bring it home, press it and freeze it.

Do you have other veg people around by you like friends or ******?

ive been wondering if you can freeze the stuff.

in my cheffing days, we had a ton of tofu that just wasnt getting used. the kitchen manager didnt know what to do with it. she wouldnt freeze it so i assumed you couldnt.

apparently, you can. so thanks for setting that straight.

tofu in my house has never lasted long, however. ;) ive been raised on the stuff.

Here is what I have learned about tofu. It has little taste on it's own but it is a flavor sponge. You can also change the texture of if it very simply. If you buy it fresh you need to use it fresh or change the water every 2 days. That is probably what you are used to. You can also take it out of the water and wrap it up in plastic and freeze it. You can also bring it home and press the water out of it. Take each block and wrap it up in paper towels. Put some heavy cans on top and press as much of the moisture as you can then freeze it. Either way you will get a different texture.

When I press and freeze it, it becomes firm like meat. Slice it, dice it, marinade it, grill it. It doesn't matter. Toss it into a stir fry. What ever flavors it touches gets absorbed right in. You can add it to anything and can't go wrong.

changing the water daily after opening is where its at. i recently learned to do that. its a great tip that really works.
 
Tofu is a pretty good filler item. It's also probably healthier than similar filler stuff like potatoes which doesn't have much flavor but is a vehicle for other flavors you add to it.

so, i made this whole wheat linguine with sliced portobello mushrooms and our home grown zuchinni and squash in a light brown butter and olive oil sauce with a tiny touch of garlic.

so amazing..

i never really had real full sized portobellos before. they are so good.
