Barbecue Meatloaf




1 pound ground round
1/2 cup barbecue sauce, divided
1/4 cup frozen chopped onion, pressed dry
1/4 cup Italian-Seasoned dry breadcrumbs
2 large egg whites
1/4 teaspoon pepper

1. Preheat oven to 375°F

2. Combine meat, 1/4 cup barbecue sauce, onion, breadcrumbs, egg whites, and pepper in a large bowl; stir well.

3. Shape mixture into a 7x5" loaf on a rack in a roasting pan. Spread remaining 1/4 cup barbecue sauce over loaf. Bake at 375°F for 25 minutes or to desired dfegree of doneness. Yeild: 4 servings

Chicken and Beef Stew


1/4 cup olive oil
1lb beef, cut into 1/2-inch cubes
2 medium onions, chopped
1/2 cup cilantro, finely chopped
4 garlic cloves, crushed in a presser
1/2-1 jalapeno, finely chopped
2 (19 ounce) cans chickpeas, undrained
4 medium tomatoes, diced
salt and pepper
1/2 teaspoon cumin
1/2 teaspoon thyme
1 cup low sodium beef broth
1 cup water
1/4 cup green olives, pitted and chopped
2 tablespoons lemon juice




1. In a saucepan, heat the oil, then saute the meat over medium heat until it begins to brown. Add the onions, coriander and hot pepper; stir fry for 4 minutes. Add the garlic and cook for 2 more minutes.

2. Stir in the undrained chickpeas, tomatoes, salt pepper, cumin, thyme, beef broth,and water; bring to a boil and then cover and simmer over medium heat for 1 hour or until the meat is done. Stir in the olives and lemon juice, and simmer over low heat for 5 minutes. Serve.

Beef and Beer Chili

Ingredients

1 1/2 cups chopped red onion (about 1 medium)
1 cup chopped red bell pepper (about 1 small)
8 ounces extralean ground beef
2 garlic cloves, minced
1 1/2 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried oregano
1 (19-ounce) can red kidney beans, drained
1 (14.5-ounce) can no-salt-added diced tomatoes, undrained
1 (14-ounce) can low-sodium beef broth
1 (12-ounce) bottle beer (such as Budweiser)
1 tablespoon yellow cornmeal
1 tablespoon fresh lime juice


Preparation
Combine first 4 ingredients in a large Dutch oven over medium-high heat. Cook 5 minutes or until beef is browned, stirring to crumble. Stir in chili powder, cumin, sugar, and salt; cook 1 minute. Add oregano and next 4 ingredients (through beer) to pan; bring to a boil. Reduce heat, and simmer 15 minutes. Stir in cornmeal; cook 5 minutes. Stir in juice.

This makes about 4 1 1/2 cups servings only. I would at least double it for a bunch of men. lol

Welcome. Everyone has to eat, most cook and life is not all sex. :D I try to share very easy and hearty recipes since board is mostly men.

Pasta Fagioli Soup

Ingredients

12 ounces Santa Fe chicken sausage, halved lengthwise and sliced (such as Amy's)
3 cups fat-free, less-sodium chicken broth
1/2 cup uncooked small seashell pasta
2 cups coarsely chopped zucchini (about 2 small zucchini)
1 (14.5-ounce) can stewed tomatoes, undrained
1 teaspoon dried basil
1 teaspoon dried oregano
1 (15-ounce) can kidney beans, rinsed and drained
1/3 cup (about 1 1/2 ounces) shredded Asiago cheese


Preparation
Heat a large saucepan over high heat. Add sausage; cook 2 minutes, stirring constantly. Add broth and pasta; bring to a boil. Cover, reduce heat, and simmer 4 minutes. Add zucchini and tomatoes; bring to a boil. Cover, reduce heat, and simmer 2 minutes. Stir in basil, oregano, and beans; cover and simmer for 3 minutes or until pasta and zucchini are tender. Sprinkle with cheese.

OMG I never said anything close to that. I simply meant to give those singles some variation. Trying to share fast and easy recipes. *shakes head* I give up its almost not worth posting anything in here anymore. Everyone twists words.

The Hawaiian Spice (My own recipe)

You need:
Instant noodles (you have to boil them first, not too soft. then place them on the pan)
Ketchup (before placing the noodles on the pan, you have to mix the ketchup with noodles, as long they go to red color)
Pineapple pieces (you have to fry them)
Fried cubics of white bread
After you have place them all on the pan and fried them then put on some spices such as:

Curry (not too much)
A little bit of salt
And if you are a real spice lover, put some chilli

All the components are on, then put on the cheese and mix it inside the food, when it's melted.

It might be complicated to understand, but it's an enjoyable food and really tasty. If you want on more information on the cookie. than post your thoughts about it.

Crockpot Meat Loaf


1/2 cup whole milk
2 slices white bread
1 1/2 lb ground beef
2 eggs
1 small onion, peeled
1 1/2 tsp salt
1/2 tsp pepper
1 tsp dry mustard
1 can (12 oz.) whole tomatoes

Place the milk and the bread in a large mixing bowl, and let stand
until the bread has adsorbed all the milk. With two forks, break the
bread into crumbs. Beat the ground beef into the crumbs until well
mixed. make a hollow in the center of the meat and break the eggs
into it. Beat the eggs a little; then grate the onions into the eggs.
Add salt, pepper and mustard. Beat the eggs into the beef. Shape into
a round cake and place in the slow cooker. Drain the tomatoes, and
place them on the meat. Cover and cook on Low for 5 to 7 hours.

Before serving, uncover the pot; turn the heat to High, and bubble
away some of the sauce. It should be thick, not thin.

Chicken and Corn Chili

Nice pick for Superbowl Sunday. Very easy. Who doesn't love chili? This is a nice twist on the traditional chili. Start in the night before, add a few things game day and you're good to go.


INGREDIENTS

4 skinless, boneless chicken breast halves
1 (16 ounce) jar salsa
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon chili powder
salt to taste
ground black pepper to taste
1 (11 ounce) can Mexican-style corn
1 (15 ounce) can pinto beans



DIRECTIONS
Place chicken and salsa in the slow cooker the night before you want to eat this chili. Season with garlic powder, cumin, chili powder, salt, and pepper. Cook 6 to 8 hours on Low setting.

About 3 to 4 hours before you want to eat, shred the chicken with 2 forks. Return the meat to the pot, and continue cooking.

Stir the corn and the pinto beans into the slow cooker. Simmer until ready to serve.

Chicken Soup with Whole-Wheat Dumplings





1. 8 cups chicken stock
2. 3/4 pound skinless, boneless chicken breast halves
3. 1/4 cup all-purpose flour
4. 1/4 cup whole-wheat flour
5. 2 tablespoons freshly grated Parmesan cheese
6. 2 tablespoons skim milk
7. 1 large egg
8. Salt and freshly ground pepper
9. 1 large carrot, cut into 1/2 inch pieces
10. 1 large parsnip, cut into 1/2-inch pieces
11. 1/2 small small butternut squash -- peeled, seeded and cut into 1/2-inch pieces
12. 1 large turnip, peeled and cut into 1/2-inch pieces
13. 1 leek, white and tender green parts only, halved lengthwise and cut into 1-inch pieces





1) In a large pot, bring the chicken stock to a simmer. Add the chicken breasts and simmer over moderate heat until just cooked through, about 20 minutes. Transfer the chicken to a plate to cool slightly, then pull into shreds.

2)Meanwhile, in a medium bowl, mix the flours with the Parmesan, milk and egg. Season with 1/4 teaspoon of salt and 1/4 teaspoon of pepper. Transfer to a pastry bag fitted with a 1/4-inch round tip.


3) Add the carrot, parsnip, squash and turnip to the stock and season with salt and pepper. Cover partially and cook over moderate heat until the vegetables are just tender, about 10 minutes. Add the leek and cook until tender. Holding the pastry bag in 1 hand and a table knife in the other, cut 1-inch lengths of the dumpling dough into the simmering soup. When all of the dough has been added, stir gently and cook until tender, about 2 minutes. Add the shredded chicken, cook until heated through and serve.

Chili Spaghetti





1. 1 pound ground beef
2. 1/2 cup chopped onion
3. 2 garlic cloves, minced
4. 3 cups tomato juice
5. 1 (16 ounce) can kidney beans, rinsed and drained
6. 6 ounces spaghetti, broken into 3-inch pieces
7. 1 tablespoon Worcestershire sauce
8. 2 teaspoons chili powder
9. 1 teaspoon salt
10. 1/2 teaspoon pepper




1) In a skillet over medium heat, cook beef, onion and garlic until meat is no longer pink; drain. Transfer to a greased 2-1/2-qt. baking dish; stir in the remaining ingredients. Cover and bake at 350 degrees F for 65-70 minutes or until spaghetti is just tender. Let stand, covered, for 10 minutes.

30-Minute Minestrone

This simple, chunky soup is low in calories. The broth's seasoned nicely, while the spinach adds a refreshing difference.


INGREDIENTS2 medium carrots, chopped

1 cup chopped cabbage
1 celery rib, thinly sliced
1 small onion, chopped
1 garlic clove, minced
2 teaspoons vegetable oil
3 cups water
1 (14.5 ounce) can Italian stewed or diced tomatoes, undrained
3 cubes beef bouillon
1 cup torn fresh spinach
2/3 cup cooked elbow macaroni
1/4 teaspoon pepper

DIRECTIONS
In a 3-qt. saucepan, saute carrots, cabbage, celery, onion and garlic in oil for 5 minutes. Add water, tomatoes and bouillon; bring to a boil. Reduce heat. Simmer, uncovered, for 20-25 minutes or until vegetables are tender.
Stir in spinach, macaroni and pepper; heat through

Skillet Pork Chops




1. 4 (1 inch thick) pork chops
2. 1 tablespoon vegetable oil
3. 1 medium onion, chopped
4. 1 cup chicken broth
5. 2 tablespoons grape jelly
6. 1/4 teaspoon ground ginger
7. 4 1/2 teaspoons cornstarch
8. 3 tablespoons cold water
9. Hot cooked rice



1) In a skillet over medium heat, brown pork chops in oil; drain. Add onion; cook until tender. Pour broth around chops; bring to a boil. Reduce heat; cover and simmer 12-16 minutes or until the meat is tender. Remove chops and keep warm. Stir jelly and ginger into broth. Combine cornstarch and water until smooth; add to broth. Bring to a boil; cook and stir for 2 minutes. Serve over pork chops and rice
 
This is a really simple (i.e. I can make it) recipe for Carne Asada.

1. Season a thinly sliced cut of steak with salt and pepper.
2. Place meat on pan and cover meat with a corn tortilla.
3. Cover pan and put over medium flame for 5-10 minutes.
4. Transfer meat from pan to plate, keeping tortilla on top.
5. Eat meat.

Macaroni Medley Salad




1. 1 (7.25 ounce) package macaroni and cheese
2. 1/4 cup milk
3. 1/4 cup butter
4. 1/2 cup mayonnaise
5. 2 tablespoons Dijon mustard
6. 4 hard-cooked eggs, chopped
7. 2 medium tomatoes, chopped
8. 1 small cucumber, peeled and chopped
9. 2 tablespoons chopped onion
10. 1 dill pickle, chopped
11. 1/2 teaspoon salt
12. 1/8 teaspoon pepper



1) Prepare macaroni and cheese with milk and butter according to package directions. Place in a large bowl; cool for 15 minutes. Stir in mayonnaise and mustard. Fold in remaining ingredients. Refrigerate until serving.

Just a note, I have made cold summer salads this way many times with the deluxe packaged mac and cheese. The shells hold the cheese (velveeta) and by adding crumpled bacon, drained diced tomatoes, diced onion and other things after it was chilled made me queen of the cookout. :D

Sometimes last minute concoctions made with whats on hand are best.

Italian Hamburgers






1. 6 tablespoons dry bread crumbs
2. 1/3 cup chopped onion
3. 1/3 cup chopped green pepper
4. 1 garlic clove, minced
5. 3/4 teaspoon dried oregano
6. 1/4 teaspoon salt
7. 1/4 teaspoon pepper
8. 1 pound ground beef
9. 6 tablespoons grated Parmesan cheese, divided
10. 1 (15 ounce) can tomato sauce
11. 3/4 teaspoon Italian seasoning
12. Hot cooked spaghetti (optional)



1) Combine the first seven ingredients. Add beef and 3 tablespoons of Parmesan cheese; mix well. Shape into six patties. In a skillet, brown patties for 2 minutes on each side. Combine the tomato sauce and Italian seasoning; pour over patties. Reduce heat; cover and simmer for 10-15 minutes or until meat is no longer pink. Sprinkle with remaining cheese. serve patties and sauce over spaghetti if desired.
