I'm thinking relievers here. Let's see...Gossage, Eckersley. Rivera isn't in the HOF yet, he must have pitched in 1000 games. Mike Timlin was around a long time. Trevor Hoffman, Jesse Orosco was around forever. How am I doing so far?

Way off as you are right on RP pitching 1000 games.

Dennis Eckersley was mainly a starter in the early part of his career. Other relief pitchers appearing in over a thousand games? Lee Smith and John Franco.
 
Note: Hoyt Wilhelm made his Major League debut with the New York Giants in 1952 at the age of 29. He appeared in 1,070 games retiring in 1972 at the ripe old age of 50. Out of the 1,070 games he appeared in, 52 were as a starting pitcher.

Yes, both Plesac and Stanton had very long careers.

I'm thinking Jose Mesa and Roberto Hernandez because they also played an awfully long time mainly with a lot of different teams...

Only 1 left. Mostly a set up guy although he did have a few closer seasons.
