and Adam....have you had seafood pizza? It didn't sound good to me either but I was promised that it was yummy and they were right.
Yup. In fact, I've had anchovies on plain old American style NY pie more than a few occasions and enjoy it. Seafood is my favourite of all proteins. But what's got me confused is the cheese and the seafood combination. Let's just say I've had a background in culinary in my past, pretty deep too. Now, I know some Italians who think seafood and cheese is straight sacrilege. And others, no fucks given.
I understand that that may come from the subtleness of seafood being overpowered by the assertiveness of dairy, but, I don't claim to be Italian, or a purest. Cuisine, is, at its most primal form, a combination of regions, ideas, inspiration, and borrowing from others. I eat junk occasionally (food for the soul and nostalgic reasons) and regular old homecooking and enjoy it as much as something fancy as fuck. The idea of seafood and cheese IS weird. Maybe thats conditioning. But it DOES work. I guess it depends on what hat you're wearing.
Honestly, if I go to someone's house or restaurant, and they say, eat this, this is good and we're proud of it. I'll eat it. Mussels with mayo and cheese broiled to a golden brown is good. I put parm on my seafood alfredo sometimes. Fuck it. But I was surprised to see it come out of Italy, that pizza. It's a subject that gets people fired up sometimes. Like that asshole on Chopped. The big Italian guy. He was a super dick about that on more than one occasion. Refused to eat seafood and cheese. I say, get over it. But to each their own I guess.
Really, I think it comes down to, not pushing your beliefs on what's acceptable to eat on someone else. You're fine to enjoy whatever you like, but don't choke my chain for having cheese touch a scallop.
