Caribbean beer-braised spicy shrimp. Inspired from my sailing trip last summer from Tortola to Martinique.

Whenever you think of an Italian dessert you think of Tiramisu. It's the traditional Italian dessert and for a great reason: it's delicious! It's also incredibly easy to make and there is no cooking or baking at all which is great! I use Hershey's Special Dark Cocoa powder which is not as sweet as the standard cocoa powder but is so rich and makes a huge difference in the taste. I love mascarpone cheese and mixing it with whipped heavy cream just makes it irresistible!
What You'll Need:
1 pound Mascarpone cheese room temperature
Savoiardi Lady fingers (2 packages)
espresso
2 shots of spiced dark rum
1 1/2 cups of heavy whipping cream
Special Dark Cocoa Powder (enough to put a nice coat on top)

This is incredible and not as sweet as some which I like. It's ultra-rich still and awesome!

red-wine-pot-roast-front.jpg

My crock pot has a LOT of miles on it and pot roasts are one of my favorite things to make in the winter. I have a lot of different ways I make it, and using red wine is probably my favorite. I use chuck roast without the bone. I get a 3 pound cut with a thick fat vein in it. I add carrots, onions, mushrooms, bay leaves, thyme, and an entire bottle of red wine. This is an easy and delicious pot roast!
What You’ll Need:
slow cooker or dutch oven
3lb chuck roast
1 bottle red wine
2 sweet onions
5 red potatoes
6 carrots
bay leaves
thyme
salt
pepper
add it all to the slow cooker and set it on low for 8 or 10 hours. AMAZING!

This is going in the slow cooker tomorrow...

I know we think of meatloaf as a very American dish but it isn’t! Italians have an incredible version that is a blend of ground pork, ground beef and ground veal. But I sometimes substitute ground turkey because you can hardly tell a difference and it’s so much more healthy. This is an incredible dish and no ketchup to be found!
What You’ll Need:
2 pounds of Ground Turkey
1 Onion
2 cloves of Garlic
2 tbsp of Olive Oil
Fresh Parsley
1 raw Egg
¼ cup of Italian Bread Crumbs
Italian Salami
Sharp Provolone
Parmiggiano
4 hard boiled Eggs
Healthy and dee-licious! it gets no better!

I would usually serve this with a side of garlic and horseradish mashed potatoes but I'm going low carb, so all by itself but still plenty good!

And I am cooking this tonight if I can find a brown paper bag as BJB suggests.

Very important to not let the bag stick. Keep an eye on it. It should be able to slide on the loaf. If not the crust will come off the loaf and onto the paper when you peal it off.

sirloin-burger-melt-front.jpg

I learned to make these because my mom doesn’t like a thick burger. This burger is SUPER thin and fried almost crispy. You top it with grilled onions and a nice spicy cheese. I use Jalepeno Jack cheese that is just incredible on a burger! The bread makes a huge difference too because with a thin burger you don’t want a huge thick piece of bread so I get a loaf of Italian bread and slice it VERY thin and grill it on both sides! This is a really great burger for kids or those who don’t want a thick burger and like them well done.
1 lb. ground sirloin
1 red onion
thinly sliced soft bread
jalepino jack cheese
