ok last night I decided to try making something I LOVE but always intimidated me.... Beef Wellington. I had it in London and it was the MOST amazing thing I had ever eaten. A fantastic Filet Mignon smothered in sauteed scallions and mushrooms then wrapped in puff pastry! It looks like a dessert when they bring it to the table but when they cut into it...fucking outstanding!!!!!!!!!

curious, did you use a probe thermometer?
 
Today I'm making 2 things I've never made before: chicken fried steak, and Eggs Benedict. It's my friend's birthday today, and those are her favorite foods, so I wanna surprise her at work during her lunch break. Wish me luck! :)

came out amazingly good I am proud to say and yes I live by my thermometer. I cooked it til internal was 125 and removed it from the oven and it turned out medium rare and yeah Regina the one in London was rare which I usually don't like but holy shit was it good. Good filet can get away with it :)

eggs bennie are pretty easy. I make that on the weekends sometimes but I add sliced tomatoe and chicken fried steak...I made once and it didnt turn out too great because of the meat I used. I used pre-tenderized cube steak instead of buying a new york or ribeye and doing it myself. Cutting corners when cooking always bites you in the ass :) so make that Bernaise for the eggs benny from scratch! No store-bought mix! :) post some pics of all this food you guys!

Did you remember the pancake, without which your pastry can become very soggy (as I learned to my cost), which is not great.
I haven't tried in quite a while. Without a thermometer it is an expensive guessing game. I would always prefer it under than over done though, so would always err on the side of caution.

nice. those things are lifesavers. i lent mine to a neighbor and he used it on his grill and torched the probe. didnt even say anything.

duck a l'orange last night. came out much better than I had thought it would :) new secret ingredient....add some bourbon to the oranges while cooking them :)
