There was a chinese place in my hometown that made the most incredible fried wontons. They were roughly like the crab rangoon that you get at most chinese places, but they used a ton of crab meat and onion, and they didn't use cream cheese. It was something chunkier and not as sweet, like ricotta or cottage cheese. I've never found another place that made them, though I've managed to make a decent approximation in my own deep frier.
