The general rule of thumb with smokers is 1 -1.5 hours per pound.

It's full (or mostly full) of beer so the can heats up and floods the inner chicken as well as the interior of the grill/smoker with moist heat.
There's a drip pan filled about half way with beer or whatever liquid you choose... and, um, hell, I gotta go buy me a chicken!

The chicken usually takes an hour and a half up to two hours or more depending on how close I set it to the coals.

I do it "Beer Butt" style so it's kind of a pain to spin it around as your cooking it but it seems to be the best approach (for me anyway) !



The smoke seems to permeate the whole damm chicken as it cooks!

Setting up so I can hang on the deck and fire up Ol' Smokey (my smoker), I think a whole chicken will be the order of the day!
