Depends on what you like. If you grew up on Attitude Era and anything that pre-dates it is a no-go, then I'd say Backlash 2000 is a great show and Fully Loaded 2000 has three dynamite matches. The 6-way Hell In A Cell at Armageddon 2000 is loads of fun and then proceed directly to WrestleMania 17, do not pass go, do not collect £200.
If you experienced or want to experience post-Hulkamania, pre-Attitude, go watch Hart/Hart and the first Shawn/Razor ladder match from WrestleMania X, the second Shawn/Razor ladder match from SummerSlam '95, maybe Shawn/Mankind from In Your House : Mind Games, Survivor Series 1996 in its entirety (it's great fun, for the most part) then Bret/Austin from Mania 13, and Canadian Stampede in its entirety, as its the best PPV they ever did for me.
Or if you don't mind Hulkamania Era stuff, Rumble 91, WrestleMania VII and SummerSlam '91 are all great fun with some dynamite matches, in particular Rockers vs Orient Express, Ultimate Warrior vs Randy Savage and Perfect vs Hitman.
Or dispense with foreplay altogether and go and watch the 1992 Royal Rumble, the best match of all time. Even though it's not fair to Flair. WHOOOO!!
