I know that there's a "Favorite herb/spice" thread from long ago, but it seemed more prudent to make a new one, especially since this goes beyond spices.

Anyways, what are some ingredients you always reach for when you're cooking? I tend to make my own spice blend that I throw on chicken or eggs and it makes them taste nummy; I don't know if they'd be considered as meshing well by connoisseurs but I like it. I'm a big fan of fish sauce and fish flavors in general. I've experimented with emulsifying different varieties of fish into dressings and sauces, I've been meaning to make my own actual fish sauce but haven't gotten around to it (yet).

I don't do much in the way of red meat, partly because I can't afford it and partly because I'm the guy who likes his steak with a little salt and pepper and nothing else.

Sea salt, cracked pepper, onion and garlic power are my power 4. Outside of that is whole ginger, white onion, whole garlic, sesame oil, and soy sauce are my other close friends.

Same here. Onions and garlic are gifts from God. Some here don't like mushrooms. I love them because they soak up flavor. Nice and chewy after a long cooking. They don't cost much. A dollar of mushrooms can be split into 2 meals.

Yea, salt pepper onion and garlic never spoils anything. SPOG it. Do it on a steak or chop over fire. You look like a superstar when it hits the plate. Do the same shit on a baked potato. You will get sex doing this.
 
When I moved. I had two decent size boxes packed with my seasoning and spices. And I love perusing through condiment aisle finding new spicy stuff.

Salt n peppa. Sometimes I'll use Pappy's seasoning rub or fresh rosemary from the garden. But I likes to keep it simple.

Mushrooms can bring a nice meaty, beefy sort of flavour to a lot of dishes, I really like them. For a while, I was cutting ground turkey with some tofu and mushrooms and using that stuff as I would ground beef. Threw it all in a food processor and gave it a few pulses. Saved a ton of calories and you couldn't tell the difference.

Expect Nothing and Appreciate Everything
When I do a Bolognese I tend to put Garlic, Bay Leaves, Basil and a splash of red wine in with the usual mince, mushrooms, peppers, carrots, onions and stock

I also do a nice prawn stir fry with butter, garlic, brown sugar, dark soy sauce, Shaoxing rice wine, onions, peppers, broccoli, carrots, Chinese five spice and chili flakes

Chicken cooked in butter and white wine vinegar with a Garlic and Corriander glaze is very nice as well :)

Sliced white buttons thrown into salads are disgusting and I pick them out. My dad had a garden. Jarred and pickled stuff. He also bought cremini and shiitake mushroom and dried them out. Tossed them into his pasta sauces. Meaty texture as you said. My love for tofu is well known. My new neighborhood is void of tofu. That sucks.
