Probably because "Iranian" comes with certain connotations that "Persian" does not.
The Persian empire covered an area bigger than present day Iran. If they couldn't get past saying "Iranian" they could just say Middle Eastern, especially since most of the people doing it probably couldn't differentiate where one comes from in the Middle East by their appearance anyhow.
I always thought white - specifically Southern European - Mediterranean (Spanish, Italian or even Greek).
