She appears to be a pretty intelligent, down to earth person, from what I saw in interviews. I mean, it's just porn in the end, but I somehow like to see that some of these girls are not the typical "dumb blonde" stereotypes. The driving principle behind veganism is to not exploit animals for food, since animals can't give consent to be a food source for humans. It's primarily an ethical thing, although many vegans argue that a vegan diet is healthier (this is medically debatable). Semen counts as a vegan "food" because the man is willingly providing it and therefore it's not exploitation. Breast milk is also considered vegan for the same reason.

I think Nicole was joking when she said she doesn't swallow because she's vegan. She probably just hates the taste of cum.
