That depends on where I'm ordering the steak. If you go to a steak house in Mexico and order your steak medium you get the same thing as if you ordered medium-well in the US. Anyway, I like my steak like my women: light brown on the outside, and pink and juicy on the inside. :yummie:

I haven't had stake in 17 years, but I remember that I liked it well done when I was a kid. When I was in Budapest, I watched my girl eat steak tartare, I nearly threw up.

I'm cooking T-bones tonight, medium rare. MR with most cuts, except prime rib, which I cook medium.
 
It should never be cooked over medium rare. Seems like a waste to me. And NEVER put sauce on it you fools. What the hell is the matter with ya'll???
 
Rare, like still cold in the centre. In fact, if it is a really good cut, it is a shame to cook it at all. Just season well and cut correctly.

Medium rare. I like to salt (kosher) the steak, let it sit for 15 minutes while I put a cast iron skillet on the burner, season with pepper and any more salt if necessary, Searing the steaks on each side for about 4 minutes, and then finish it off in a 500 degree oven for a few minutes.

I also like to age big cuts for a few weeks. Makes an average, cheap cut into gold.
