French, when done well, is simply unbeatable. It incorporates most everything Italian cuisine does, and offers you a variety so great, there's something for everyone. Everything from simple, peasant dishes that are incredibly filling and delicious, to very elegant, fine cuisine. It's all in the ingredients and preparation.
Chinese certainly offers a different variety, but authentic Chinese cooking would not be as popular in North America as the version that is here. Too many unknown ingredients. Also very delicious, though.
