I think most people consider the Czech Republic, Hungary and Poland to be Eastern European. Estonia, Latvia, and Lithuania are Baltic states, although they're often grouped with Northern Europe.
One of my all-time favourites is the Czech glamour model Veronika Zemanova.
A quick look at Wikipedia reveals that it's less than clear what qualifies as "Eastern Europe", with the UN including everything behind the Iron Curtain, including Czech Republic. The CIA only includes old Soviet states like Ukraine.
