So, little known fact but I LOVE to bake.. I am obsessed with being in the kitchen. (Insert joke here)

No but really, I love to cook & I especially love to bake. Here are some cupcakes that I've made in the past. (The gummy bear ones I just made tonight)

Do any of you guys have any recipes that you'd want to share? I doubt we have many bakers in here but I would love to get recipes for different things if any of you guys have some. :)

If you want sharper separation of areas for multi-coloured cupcakes, get some edable paper and put it in between ;)

I love the way those cupcakes look, and I'm sure that they taste even better.

I have this awesome recipe for no-egg microwave chocolate cake that everybody I've made it for has loved. Takes like 5 minutes max preparation time and only 4 minutes to cook, and it comes out pure deliciousness.

I make a tres leches cake my girlfriend demands on her birthday. Bake your favorite white or yellow cake, let it cool and take a fork and poke holes all over the surface of the cake. Pour a mixture of one can sweetened condensed milk, one pint of heavy cream, and one pint of whole milk over the cake and let is sit and soak in the fridge over night. Take it out the next day, whip a quart of heavy cream and a teaspoon of vanilla extract until you've got peaks and layer that on top of the cake. Chill for an hour and serve.

Cookies and Cheesecakes I seem to do well with. I can also make a pretty good Red Velvet Cake (scratch). I have an issue burning the pie crust along the edges. I tried using the tin pie covers and that seems to help a little. I have a thermometer in the oven so that doesn't seem to be the issue. Once I get that correct it's pecan pie fest (chocolate, bourbon, regular)!

However, seeing you mean baking, I do not bake as I tend to like to fix meals. Breakfast, lunches, or dinners. I also like to make snack foods and come up with little creative ideas when I get the kitchen culinary itch.

I used to bake a whole lot more than I do now.
We're trying to eat a lot better, so that means I can't ruin it all with cookies and cupcakes anytime I get the urge. :(

I have found an INCREDIBLE recipe for a lightened-up version of peanut butter pie!! I made this one a few days ago, and I'm going to make TWO tonight. One with a chocolate graham cracker crust, the other one regular. ;)

OK FINE! Here it is.

* 5oz reduced fat cream cheese, softened
* 1/2 cup confectioner's sugar
* 1/3 cup reduced fat peanut butter
* 8oz fat free frozen whipped topping (Cool Whip)
* reduced fat graham cracker pie crust
* Hershey's Chocolate syrup

Beat cream cheese and confectioner's sugar together in medium bowl.
Mix in peanut butter and beat until smooth.
Fold in whipped topping.
Spoon into graham cracker pie crust, cover and refrigerate until firm (2-3 hours).
Drizzle with Chocolate syrup before serving.

Enjoy the deliciousness!

Very simple, and incredibly tasty!
